Granola

Breakfast is my absolute favorite meal of the day... mainly because that's when I am the hungriest and I can continually keep on eating, no joke, I give myself 30 min. to eat before I leave the house.  But this breakfast satisfies me, keeps me full until lunch, and keeps me healthy.  Muesli is one of my favorite meals anytime/all day/any day but this breakfast is a nice twist up.  It's filled with oats, raisons, soaked barley & buckwheat, flax seeds, gogi berries, green apples, pears, blueberries, strawberries, bananas, and topped with granola of course... for that extra crunch!  I stocked my granola jar with fresh homemade granola this week that I am just crazy about.
I kinda just threw everything and ate along the way so I'm going to try to remember all measurements, but in reality, granola is one of the easiest things to make.  Buy, toss, mix, pour, bake, and eat!

Homemade Granola

3 c. old fashioned oats
1 c. unsweetened coconut
1 c. sliced raw almonds
1/8 c. raw sunflower seeds
1/4 c. raw pumpkin seeds
1/4 c. flax seeds
4 dried dates
4 dried figs
1/4 c. honey
1/4 c. agave (if you want sweeter add pure maple syrup)
olive oil to add extra if it needs to be more moist

1. Mix together oats, coconut, nuts/seeds.
2. Pour over honey, agave, oil.
3. Line baking sheet with foil, spray with oil and pour on mixture.
4. Bake in oven for 25-30 min. at 300°.
5. Let cool and chop up dried dates and figs.
6. Add dried fruit in a few at a time so they all don't clump together.

yuuuumm that looks delicious! what a perfect breakfast meal for sure. I wish I woke up early enough to actually eat breakfast. I'm more a grab and go kinda person. Are you done with all the india pictures? I was having so much fun following along. They were absolutely gorgeous. I do have a question though.. what kinda camera did you take to India? Did you not worry at all about it getting stolen or being robbed? I've just heard horror stories, and i'd like advice on traveling with a nice camera.
