[can i say, that i'm quite proud of myself today?
by 9:00AM i had already made eggs, bacon, & toast
AND started on hummus for lunch today...
do you know what that means?
i got up at 7AM!
which is still so hard for me, but landon had to get up to study
and i thought it was rude to just stay in our warm bed and sleep in till ten.
although my hair smells of bacon & roasted garlic, it was worth it.]

anyways,

last night landon & i had fun cooking together.
we like to think that we are one dang good team.
he made the chicken fried rice
i made the crab wontons.

okay college wives,
this meal is super easy and fun for a little change to the usual dinner.

Crab Wontons
[makes about 20]

4oz. cream cheese - softened
2 green onions - minced
1/2 tsp. fresh ginger - minced
1/4 lbs. crab meat*
kosher salt/pepper/garlic powder to taste
20 wonton wrappers
bowl of water to seal the wontons
2 c. canola oil for frying

1. In a bowl mix together all the ingredients.
2. To make the wontons, place about a teaspoon in the middle of the wonton,
dip your finger in the water and run along the edges of the wonton wrapper.
Fold into a triangle and make it fancy by folding the two sides in.
3. Heat 2 cups of oil. Once the oil is hot, put in a few wontons [for about 2-3 minutes]
and walah, your wonton is made and ready to eat!
4. Place on paper towels to remove excess oil and sprinkle with Kosher salt.

You can serve this with any sauce you prefer. Plum sauce, sweet & sour, etc.

*if crab is too spendy for us poor students, get imitation crab!
it's super cheap and honestly still tastes so good in the wonton.


so maybe landon had the harder job with the rice, but as you can see,
there's an art to folding wontons.
which one would you prefer?
[he actually suggested to take a photo of his... i'm not trying to be a mean wife :) ]

okay and for this chicken fried rice.
one random night when i was stressing with the charcoals landon got in the kitchen and
randomly made chicken fried rice, from his imagination and creativity. it was better than
the restaurants in my opinion and was so fresh and spicy.
he never ceases to amaze me
so i don't know the exact ways of his masterpiece..
but
1. cook the rice first
2. saute up the veggies [carrots, mushrooms, peas, corn, green onion etc]
3. add in the egg and cook up
4. add in the rice
5. flavor with garlic powder, cayenne pepper, soy sauce,
and anything your little heart desires.
and i'm super excited because we have left over wonton wrappers which means....
dessert raviolis!
mmm so good.

this is one of our favorite meals to make together, too! the wontons are a little different but we love how simple and easy it is.

YUMMMMMM!! I'm going to try this recipe! Maybe this week since the boys are home!

I fold mine completely different, but in my deep fryer they puff up too much and explode, so I'm going to try out your technique! looks like they lay nice and flat and hopefully won't explode on me! LOL
